What's for Dinner Tonight?

3 year old foster son Kobe got to pick the meal tonight.

White Castle drive thru window burgers. "everything" plus extra onions.

He fell asleep in the car in the drive thru line.

We're making a double batch of sweet and sour meatballs then dropping off supper to our friend who's husband just passed away and was buried Monday.
 
We are having;
Grandpa's Hamburger helper.
My own recipe because the commercial versions are full of chemicals like MSG.



1/4 cup extra virgin olive oil.
1 Cup of ground round beef, 90% lean, or Chuck.
1 small can of sliced mushrooms ( or 6 fresh white ones)
1/4 cup diced onions.
1/4 cup of sliced celery
1/4 cup of diced green pepper (optional).
1 tsp of Oregano
1 tsp of Basil
1 tsp of Cilantro

1 12 oz bag or box of Medium Macaroni pasta.

the cheat;
one 15 oz jar of prepared Alfredo sauce.

Brown the Beef, mushrooms and onions in the olive oil.
After the meat has browned, add the celery and green pepper and spices and simmer for about 15 minutes.
Add the prepared Alfredo sauce or make your own

Let simmer for 15 minutes whilst you boil and drain the pasta.

Mix the pasta and beef/mushroom sauce and stir well.
Top with grated parmesan cheese and some black pepper to taste.
 
Not gonna lie - my shepherd's pie is pretty epic. As an added bonus, I remembered to leave a potholder on the handle after it was out of the oven, so I didn't brand myself like David Carradine in the opening sequence of Kung Fu like I did the last time. Bill Engvall was able to give the sign to someone else tonight.

You have probably heard of HAMBURGER HELPER

Tonight I made, what my family lovingly calls as BOBBURGER HELPLESS

It actually varies in success. I gave up a lot of carbs, so I typically start with Hamberger Helper. Eliminate the moods. Replace noodles with cauliflower, or Jonjack noodles, or bockchoi or cabbage or cauliflower.

Depending on how I season it is can be awful or pretty darn good. Today turned out to be pretty darn good. Large can of stewed tomatoes. 1 can of mushrooms. 1# italian sausage, browned. Boc Choi, cubed. some Italian Sprinkles herbs. Some cheese melted in, to make a light cream sauce. For a little extra bulk, I put in 2 packages of konjack rice shaped noodles

Tonight's tasted pretty darn good. Honestly I would probably have preferred it more if I added garlic and onions. Clearly my error.
 
Pot roast (chuck) is in the oven. It's sitting on top of 2 large sliced onions and 1/2 of a bunch of bokchoi. I sautéed the onions and bokchoi in olive oil prior to adding the meat and placing the whole thing into the oven. There is also a packet of "french onion soup mix" in the pot.
 
I think I may thaw out a small pork loin roast from the freezer and smoke it all day Saturday.
I am the only one in the house who will eat pork so this will be a special treat just for me.

The rest can have burgers and dogs.
