finally got my act together to try some yeasted Liege style waffles.
been doing baking powder types since forever, something new needed . . .
one mixes the batter, in the fridge overnight to let the yeast do its thing . . .
the batter:
170 g warm milk
3T butter - melted
salt
1/2 - 1 t vanilla
1 egg
120g AP
.75t yeast
mix batter
overnight in fridge
batter swells but collapses when stirred
I did some homemade vanilla extract (3x beans chopped) in vodka - used 2 teaspoons
did not add the pearl sugar at mixing
AM of the waffle time:
pre-heat waffle iron
stir (rested) batter
mix 70 grams of pearl sugar into batter(*)
(pearl sugar looks like busted up sugar cubes . . . )
* = I found 70 grams to be much too sweet. Liege waffles are most famously a 'street food' snack - fixed on order, delivered in wrapping paper.
also consumed as a sweet confection....
I plan on 35 grams of pearl sugar next batch . . .
note: the sugar chunks can melt onto the iron - I advise a careful check&clean while the iron is still hot . . .
