Welcome to the madhouse, I try not to do too much cooking - well I live on my own, so I have an excuse. If you like cooking, have you tried Bara Brith? It is a Welsh recipe, translates as spotty bread, sounds horrible in translation, but it is lovely, sliced with or without butter.
Would that be anything like Spotted Dick?
Love it with custard. lol:biggrin:

Nope, nothing like spotted dick, I can give your the recipe if you like, it is very easy. Just consists of flour, mixed fruit, warm tea, brown sugar and an egg. It freezes very well too, I will take one out of the freezer and photograph it for you so you can see what it looks like, but can't send a taste very easily!
 
I adore spotted dick and it is not difficult to make. I am an anglofile--and have a good friend living in Queens Park.
 
Actually, I like to bake from scratch but I think the can of spotted dick is hilarious!!!! And what is spotted dick without a little Bird's custard?
 
I defrosted the Bara Brith and my friend and I had some with a cup of tea, but we didn't eat it all so here is a picture of what is left. I had mine buttered, but she had hers without. It is made in loaf tins, I usually double the recipe and make four loaf tins, but the recipe is for two loaf tins, so it is up to you.

Day 1

1 1/2 mugs of mixed dried fruit
1 mug of brown sugar (demerara)
1 mug of warm tea
pinch of salt
Leave (covered) to soak overnight

Day 2

Add 2 mugs of self raising flour
1 egg

Method

Mix all the ingredients together well with a wooden spoon and divide into two well grease or lined loaf tins. Place in a pre-heated oven (gas 2-3
325f/150c) and bake for 1 hour. (I usually prod them with a skewer to ensure they are cooked as my oven is not overly reliable temperature wise)
