Looking for hobbies/models/puzzles... ideas for disabled senior (male)

My dad is in his late 80's. Pretty much confined to wheelchair and after his stroke, has pretty much lost his left arm. He's been doing models for the last several years to keep busy. He's knocked off most of the wood models available (I think he's built somewhere around 80 of them). Example below of wood trick models.

He's not going to pursue these wood models anymore due to things not fitting perfectly which causes frustration so he's moved on to Lego's for adults. These are 2000-3000+ piece models. A recent one he complete is pictured.

Now, he's getting a little frustrated with the Lego models. Mainly due to intricacy (assembly that requires 2 good hands) and very small parts.

I'm looking for hobbies or ideas that can give him something challenging but can be done with limited physical ability.
So far, I can only think of brain game books. He's still super sharp mentally so I have a feeling he'd fly through these.

Thoughts/ideas?

Very impressive work.
I saw an app for the iphone a month or so ago. Brain games. I downloaded it but then I saw it had a monthly fee. 15 bucks or so. Might be worth it for him. It should be always something different from what I read about it. He could probably use an ipad for for the app. Bigger screen and easier for him to see.
 
He has a computer but no iPad or similar. He struggles seeing computer screens after a short period that's why I was considering something on paper if a brain game is the way to go.
