Killed the pig today

Gone But Not Forgotten
Went to my Amish neighbor's farm at 9 am and we did up the hog we bought together back in July. Dang thing got up around 400-450 lbs. His little cable come along was straining to hoist it up. His boys got a lesson on doing a pig up fast. We were done and my half was in the suburban by 9:40 and on the way to the butcher shop to be cured and smoked. They have done hams for me before and I am getting the loin smoked along with the sausage and hocks. Got to get myself a saw and grinder. Wife keeps saying no but when I find a good one it will happen.

Bill them kids got a great lesson that most kids do not get these days...knowing how your food gets to your plate should be taught in schools with no holds barred, farm visits should be encouraged.

I bet that pork tastes sweeeeeeeet.

Bill,

We butchered a whole pig a few weeks ago. On the grinder, do yourself a favor and get one with a motor (or at least the option of running it by motor). Grinding by hand gets pretty tiring...

Hey Brian, With about 120+ hogs butchered I would never even consider a hand crank. You can do a pulley and 1/2 hp. motor pretty cheap on a #32 grinder and do some serious grinding with carbide blades and a good screen. I would get a spout adapter like my sausage press to bag burger with. I wont settle for a cheap bandsaw as the table slide and being able to teardown and clean it is important.

My buddy bought one of these a few years ago..when we were doing 8-10 hogs a year.. http://www.grizzly.com/products/Meat-Saw-w-Sliding-Table/G0560 Seems they have went up in price ...since then.. but if you buy a grinder and a sausage stuffer separate...cost could compare..
I have been thinking about going down to their showroom in Muncy,Pa. It is only about 95 miles from me. Need to finish a few other projects first and start stashing dollars.
