I have a question for you Mama.
On the 5th of March, we're having a carry-in at work to celebrate 2 of our nurses 25 years in service.
I want to make something that will feed a crowd of about 20.
Any suggestions?
1.Must be delicious
2. Must be enough for seconds
3. Must be easy to throw together
We've already got crockpots of creamed chicken, bbq beef-side dishes-vegetable trays, and some desserts in the works.
I am the only vegetarian who works where I am.
Knocking myself over the head trying to come up with something fab, although those asparagus things what's-his-name posted sounded good:brows:

southwest pasta salad?
1 lb tricolor pasta
1/2 lb dried tortellini
1 bag "Salsa corn" (frozen veggie mix)
1 jar wal-mart black bean and corn salsa. (can use fiesta or salsa flavored sour cream dip as alternate or addition)

feeds 12-15

or use same pasta and bag of frozen "italian vegetables" and use 12 Oz "zesty Italian" or your favorite balsamic vinegarette for a different taste.

if you need a higher protein concentrate, add Boca or Morningstar crumbles.

I'm not familiar with the recipe your talking about and I don't know how well asparagus will keep on a buffet.

I'm going to cater my daughters wedding in June and she requested a mashed potato bar. You could make these and offer toppings like sour cream, butter, sauteed mushrooms, chives, caramelized onions, chopped broccoli, shredded cheese...you're only limited by your imagination. This would go really well with the creamed chicken and bbq beef also.

I have a great recipe for freezeable, holdable mashed potatoes that will serve 25 for around $10 and then you could just choose the toppings you want to make.

If you want to make a main dish, how about a spinach lasagna? I have a great recipe for that.

If you want to do a fruit tray, I have a great french cream dip that is a real crowd pleaser.

This is Bam's recipe I was talking about.

1 lb fresh asparagus, trimmed and cut into 1-inch pieces
4 oz cream cheese, softened
1 TBL milk
1 TBL mayonnaise
1 TBL diced pimientos
1 TBL finely chopped onion
1/8 tsp salt
Pinch pepper
1 tube (8 oz) refrigerated crescent rolls
2 tsp butter, melted
1 TBL seasoned bread crumbs

In a large saucepan, bring 1/2 in. of water to a boil. Add asparagus; cover and boil for 3 minutes. Drain and set aside

In a small mixing bowl, beat the cream cheese, milk and mayonnaise until smooth. Stir in the pimientos, onion, salt and pepper.

Unroll crescent dough and separate into triangles; place on an ungreased baking sheet.

Spoon 1 teaspoon of cream cheese mixture into the center of each triangle; top with asparagus.

Top each with another teaspoonful of cream cheese mixture.

Bring three corners of dough together and twist; pinch edges to seal.

Brush with butter; sprinkle with bread crumbs. Bake at 375* for 15-18 minutes or until golden brown.
 
I think I'll make your Quick Crab Dip, and make what Erik suggested. yay!!! :D

Those asparagus darlings will have to wait for another time, cause I'd eat them all myself.
