Not sure that I have any real favorites, but I like older movies and whatever I list I would likely forget more than I could remember but they would include
Von Ryan's Express
The Great Escape
The Sand Pebbles
The Sound of Music
Voyage to the Center of the Earth
Captain Nemo (any of the various versions)
Swiss Family Robinson

Somewhat more contemporary
Indiana Jones movies
Star Wars & Star Trek

As for TV series, any of the Star Trek series but Next Generation and Deep Space 9 would rate high. I look forward to "24" also. I can't think of any "Mini Series" that I've ever watched.

Besides a few already on your lists, I'll repeat

Star Wars series
and add
Terminator series
and then add any good auto chase movie starting with
Bullitt and
Ronin
then add most Clint Eastwood movies. I especially like the spaghetti westerns (Sergio Leone produced and filmed in Spain, the start of the man with no name westerns, can anyone forget: The Good, The Bad and The Ugly? I'll bet you can all whistle the theme song.)

Gotta add Heat, the gun fight scene is big time intense.

On the tube I enjoyed Miami Vice and have the first season set of the DVDs

Victory by Design was a exotic car series on Cable TV that had a sound track that would drive any motor head crazy.

Victory at Sea was the first TV series I can remember and it is still great.

I thought the Godfather was great. II and III were okay, but the 1st one I still watch on occasion.

Operation Petticoat - old submarine movie. They ended up painting the sub pink.
All Bond Flicks. Goldfinger is my fav. But I can watch about any of them over and over.
Exorsist (the 1st movie my wife and I went to ....what a first date, I had read the book and wanted to see the movie, little did I know she had seen the movie already and just wanted to go out with me! :) )

Oh boy. This is actually a tough one. I don't have many favorites. Heck, I barely ever watch movies. But here are the ones that I like:

The Jurassic Park movies (I liked the first one the best, II and III are ok)
Black Dog
The Hunt for Red October
Sink the Bismarck
Titanic (not the mushy love story crap)

Well, that's about all I can think of right now. One movie I want to see and I know I would like is Das Boot. I want to get the uncut version.

Heck of a mini-series. Excellent cast - especially Robert Duval and Tommy Lee Jones

BTW,
these days I tend to watch movies to see the "work" of various actors. I have my list of favorite actors and they tend to make the movie. However, though I enjoy James Caan's work, I won't see something like "Mickey Blue Eyes" due to the fact that Hugh Grant is in it.

HG (sucks) in a movie kills it for me. To me, if he's in it it's a little too girlie for me. I don't waste my time putting up with something like "Hope Floats" with the wife to make points either. I remind her that she has plenty of sisters if she wants to see that stuff.

I enjoy the actors that have been "all over" the place, but you never know who they are. I also enjoy watching the movies when I can get IMDB for trivia and to watch for goofs.
Like Danny Trejo, Robert LaSardo, Brion James, James Remar, Dennis Hopper, Lance Henrickson. These guys show up in all sorts of movies (Brion James' has passed already though)
I also have a shorter list of chicks that I like to watch.
In a nutshell, this is how I make my picks for entertainment.

Someone also mentioned Deadwood - a truly awesome, groundbreaking Western. Ian Mcshane is awesome.
